Meet Adam Wilde

Hometown: Hale

Work experience: I started my training at Shrigley hall hotel & country club at from the age of 14 until I moved to London’s hotel scene when I was 17, I jumped straight in at the ‘Connaught hotel’ Mayfair for 2 years. With a brigade of 56 chefs and 11 individual sections I gained valuable experience from head and mentor chef ‘Michel bourdin’ who arranged stages for me at ‘Claridges’, ‘The Green House’ & ‘Waterside’. I then spend 2 years working under ‘Peter walters’ at the ‘Berkely Hotel’ Knightsbridge as chef saucier.
I returned home as head chef at ‘Brassingamens’ in Alderly edge for 5 years
Opening The House Restaurant In 2005 & then opening Te house wine bar in 2007


Tell us about your current menu: The menu structure is fundamentally French/Belgium with a few modern techniques. My second chef Adam Russell and I use seasonal and local fare to produce menu content that changes regularly.

What is your favourite dish on your menu and why: At the moment it’s a sea bass starter with pear & mango salsa, crispy pancetta, alfalfa sprouts & lime Crème Fraîche. Combines wonderfully fresh & strong ingredients - refreshing on a summers al fresco dining

What inspires you: What or who?
I take great inspiration from ‘Michel Bourdin’ who dedicated his working life to his cooking – he said on my first day at the ‘Connaught’ ‘Good cooking is the accumulation of small details done to perfection ‘ as he tasted every sauce I had prepared for that days service. A statement I have a greater understanding for now as in his kitchen there was no room for short cuts masquerading as creativity, or indiscipline pretending to be spontaneity. There the word craft is not demeaning: it implies care, great skill and consistency. This discipline and knowledge he gave to his apprentices every year.

So the question should be who inspires me? & the answer to that is ‘Monsieur Michel Bourdin’ maitre-chef ‘The Connaught Hotel’ Mayfair London.
