Simon Rimmer Recipe - Black Pudding salad

This is the simplest of starters made using some of the best ingredients in the North West. Duncan Collinge the Chef at the Lakeside Hotel on Windermere uses black pudding from the Real Lancashire Black Pudding Company but any good quality pudding will do. The Lavender adds an interesting flavour. Simon Rimmer also makes a variation of this using a couple of lavender heads so if you have them in the garden use that and plain apple jelly.
