Hometown: Rabat, Morocco

Work experience: Years of watching & helping my family cook in Morocco and then learning the trade professionally at different places in Manchester; JasJasJas, Selfridges, Piccolino's, Loch Fyne and others. I have met so many great people and learnt so much and am still learning!

Tell us about your current menu: It is a selection of Moroccan and Lebanese dishes. Basically it is tasty, wholesome food at affordable prices. I really want people to have the chance to forget their worries for a short time and dine as if they were a guest in a Moroccan palace.

What is your favourite dish on your menu and why: African chicken (rice, chicken, chick peas, sultanas & spices) . It is typically Moroccan because it mixes sweet dried fruit with meat which is an ancient tradition inherited from the native Berber culture in North Africa. I like the idea that the concept has travelled all the way from the Sahara to Lancashire!

What inspires you: My family!

Which is your favourite restaurant? (not your own): Anywhere that serves fresh, authentic Italian food
