Mel Meets.....Head Chef Kevin Lynn

Mel was out and about the other day in Rossett and decided to call into the new Machine House to check out their latest menus and bumped into Kevin Lynn.

Hi Kev, I'm Mel. What do you do here? Hi Mel - I'm the chef/owner here at the Machine House.

And how long have you been cooking for? Too long, can't remember!

Tell me about your current menu.We have just launched our new season menu for the end of summer. A simple menu based on flavours over presentation.

What is your most popular dish? Got to be the duck dish with heritage carrots, a herb emulsion and rye bread crumb.

Sounds ace! How about the tastiest meal you've ever had? Easy. Beans on toast with grated cheese on top AKA 'skin heads on a raft'.

Ha ha ha ha! Do you have a favourite restaurant (Machine House isn't allowed!)? Manchester House.

Would you ever go on Masterchef or go down the celebrity chef route? No, not for me.

Where do you sit with Michelin stars; do you think they really matter? No comment about the Michelin; our ultimate goal to satisfy all guests that dine at the Machine House and to run a successful restaurant.

Who does the cooking at home? No one we eat out all the time!

What about junk food; got any guilty pleasures which a chef shouldn't really be seen eating? Yes, I enjoy donner kebabs!

What about you - 10 years, where will you be? Hopefully still here at the Machine House.

Any tips for budding chefs? Don't do it!

Any chef you'd like to work for? Tom Kitchin.

Finally you are in an all you can eat - what you going for first? The door!

Kevin Lynn, is one of the exciting new breed of Chef Du Patron's that are emerging across Cheshire. Having won AA Rosettes at The Belle Epoque and Shrigley Hall he has finally opened his own restaurant and the Machine House is the perfect vehicle for his flavour inspired foods. Kevin's philosophy is to surround himself with outstanding local produce and then intensify the flavours and let the food do the talking.

The Machine House is an intimate setting just a handful of miles from the centre of both Chester and Wrexham providing outstanding food in a unique menu inspired by Kevin's love of the sea and the land. His dishes find colourful ways of creating outstanding flavour laden dishes and his constant search for the perfect combination means you are enjoying cutting edge cuisine. Kevin's six course tasting menu means he cooks what he wants you to eat and you simply sit back and enjoy and his set menu features starters, mains and desserts that leave you with a real decision making problem - which one to choose?

Kevin makes all his own breads, butters, ice creams and sorbets as well as stocks, marinades and quite often catches his own fish for a real treat on the menu. If you love food and flavour then the Machine House is a must visit.
