Bistrot Pierre Spring Recipe: Remoulade au jambon de Bayonne



This month Bistrot Pierre are sharing their beautiful celeriac and Bayonne ham recipe with you. The ham is a classic French staple and derives from the South West of France.

It’s quick and easy to make and is the perfect starter to delight your friends and family.

Preparation time: 10 minutes. Serves: 4.

Ingredients:
200g Celeriac
20ml Lemon juice
80ml Mayonnaise
10g Wholegrain mustard
2g Sea salt
2g Flat leaf parsley
8g Chervil
4ml Extra virgin olive oil
12 slices of Bayonne ham

Mise en Pace:
1. Pick the chervil.
2. Finely cut the celeriac into long, thin strips.
3. Season with salt, add the lemon juice and leave for approximately 30 minutes.
4. Squeeze as much of the liquid out of the celeriac as possible and place celeriac into a mixing bowl.
5. Add the chopped parsley, grain mustard and mayonnaise to the celeriac and mix thoroughly.

Method:
1. Neatly lay 3 slices of Bayonne ham on each plate.
2. Place a ring mould in the centre of the plate and press ¼ of the remoulade into it.
3. Remove the ring and garnish the remoulade with picked chervil.
4. Finish with a drizzle of olive oil.

Serve immediately with a full bodied French red such as a Melbec or Bordeaux.

We have something for everyone, from our two-course prix-fixe lunch for '£11.95 and a two-course pre-theatre menu for '£14.95 to our evening a la carte menu. We also offer gluten-free dishes and a children's menu, which comes with our bespoke 14 page activity pack.
