Meet Chris Holland
Hometown: Rochdale
Work experience: Attended Hopwood College, Rochdale.
From an early age he recognised the fresh flavours of his local bakery and learned the basic grounding in the execution of cooking great food using good local ingredients which still forms the basis of his philosophy and indeed the ethos behind this Modern British/International cuisine.
For many years he worked alongside some well known leading Chefs and learnt from their experiences.
Chris joined the brigade at the Alderley Edge Hotel which currently has two AA rosettes and he was given the opportunity to become Head Chef in Summer 2004.
Tell us about your current menu: Keep flavours clean – they should stand out individually; and always try new dishes whenever you can.
We keep to traditions whilst always seeking to extend them.
Therefore, our Restaurant is based on keeping to simple
but imaginative cooking using best quality local fresh produce.
What is your favourite dish on your menu and why: POT ROASTED HALIBUT, CELERY and APPLE MASH, MUSCAT EMULSION.
Works with our philosphy of simply yet imaginative, and uses the best ingredients.
What inspires you: The best ingredients - I belive in my ingredients first and foremost, they form the basis of a good dish.
