Chef Profile: Ben Finchett



Work Experience: I started as a pot washer and got the food bug from being inspired by the team in the kitchens so then decided to train as a chef. I was lucky enough to work under Paul Swanson and Steve Carmichael (Holt Lodge) and worked my way up to a CDP. I then had a few jobs in between then moved to the Chester Grosvenor where I worked for 2 years under Simon Radley as a Chef De Partie (CDP) then worked my way up to Sous Chef. Following this I then came over to run Marco's as Head Chef.

Tell us about your current menu: It is filled with Great British classics influenced by Marco with a modern twist. We run our A La Carte menu with our TDH menu and specials alongside.

What is your favourite dish on your menu and why? Got to be the Rib Eye Steak from the A La Carte menu, as it is my favourite cut of meat with the most flavour. From our TDH & specials menus it would be Rabbit Kiev with Cannelloni of Confit Leg and Celeriac Remoulade with whipped Hollandaise and Offal Crouton.

What inspires you? The ability we have to create something fabulous out of nothing!
