Hi Andrew, how long have you been cooking for? I have been catering for all manor of events for 25 years.
Tell me about the current menu Our menus currently display a fusion of African Caribbean & European Dishes.
And the most popular dish on the menu is? Our most popular dishes that we sell to our customers are Nigerian MOI MOI, Ghana peanut chicken, Jerk Chicken, African Mussels.
What is the tastiest meal you’ve had? The tastiest dish I have ever eaten is Nigerian pepper soup Cooked by my mother and father.
Where is your favourite restaurant? My favourite restaurant is the Far Pavilion which is on Manchester Road in Atherton.
Would you ever go down the Masterchef or celebrity chef route? I don’t think I would deliberately go down the celeb route although I would not discourage and opportunities as for master chef I don’t feel the need for it. I am happy with my catering skills and where I am in life is just great with the passion I have for food.
What do you think of Michelin stars - is this the ultimate goal? At one time it was a goal to reach Michelin star and I have done a variety of catering over the years; rosette level is about as high as I have reached and it has given me the experience to run my own catering company and at this time in life I am happy with myself.
Have you any guilty pleasures when it comes to food? Vanilla ice cream and apple pie!!
What about 10 years from now, will you still be cooking? Yes, I hope to have made my company more successful than it already is.
If you could work for any chef, is there anyone you’d pick? Raymond Blanc is definitely who I’d like to work with
We get a lot of budding cooks visiting Onionring. Have you any tips of people hoping to enter the hospitality industry? I have no advice except if you are truly passionate about food, then follow your dream and expect a lot of hard work getting there
