Each dish will have its own distinctive flavour and aroma which cannot come from any curry powder, but from spices which have to be specially prepared each day fresh for each individual dish. All preparations that are cooked in the Tandoor are marinated in yoghurt together with a special blend of herbs and spices. This process seals in the goodness. The blending and preparation of spices is centuries old craft and indispensable to Indian Cuisine.
