Tell us about your current menu: New menu due to start beginning 7th June 10. Using fresh produce sourced from suppliers in and around the Cheshire area, freshly cooked to order food with a modern British style yet mixed with a mediterranean feel.
What is your favourite dish on your menu and why: Anything off the fish specials which changes frequently to ensure market freshness and best quality. eg,Grilled fillet of sea bass on leek potato cake, rocket and Parmesan salad and crisp pancetta lardons.
What inspires you: Good quality fresh produce.
Which is your favourite restaurant? (not your own): Loch Fyne, Stockton heath
