Featuring this seasons produce, including "Lapin Cuit Aux Trois Facons Sauce Estragon"... Rabbit cooked 3 ways, leg confit, ballotine & shredded rabbit bonbon served on wilted Savoy cabbage, a julienne of vegetables & a deep fried white onion & parmesan potato croquette, finished with a creamy fresh tarragon sauce.
