A Taste of France in North West England book launch
Acclaimed French restaurant owner Olivier Troalen, at La Boheme in Lymm, has published his first cookbook, featuring recipes served in the restaurant over the past decade. A Taste of France in North West England, which is written by Paris-trained head chef and owner, launched at La Boheme on 26 November 2012.
A Taste of France in North West England is a collection of the most popular recipes from La Boheme, which is featured in The Good Food Guide 2013. These inspiring recipes give step-by-step instructions that utilise home-grown North West ingredients and a certain ‘je ne sais quoi’ to produce mouth-watering French dishes for the British palette, dispelling the myth that good food can’t be found in the North of England.
Lavishly illustrated with high quality photography from start to finish, the 34 recipes in the book are divided into Les Entrées (Starters), Les Plats (Mains) and Les Desserts. ‘Beignet d’Haddock’, the most popular dish at La Boheme, is a French variation on traditional fish and chips that presents smoked haddock fritters with sweet chilli and ginger dressing. Equally representative of Oliver’s unique style is ‘Mon Bread and Butter Pudding’, a pairing of brioche with vanilla ice cream and creamy caramel sauce.
Olivier says of his new venture “I’m passionate about taking traditional French dishes and using ingredients sourced in Cheshire to make them my own. You might say that I want to be recognised as the ‘Cantona of cooking’! I hope this book will inspire people to have fun recreating my dishes at home. There is no greater thrill for me than serving our guests freshly prepared, French cooking with a Northern twist.”
After training at a catering school in Paris, Olivier worked at the French Embassy in London in the 1990s, where he waited on Her Royal Highness Queen Elizabeth II, Baroness Margaret Thatcher and Diana, Princess of Wales. When Olivier relocated to Manchester he met his wife Adele. The pair bought La Boheme in 2000, where they have been serving great food ever since. After 12 years of delighting their clientele, Olivier has finally torn himself from the kitchen long enough to share his unique recipes in a cookbook that infuses classic French recipes with Mancunian joie de vivre.
