Work experience: I have been cooking since 16 yrs old. Trained at a catering college in GENEVA ,SWITZERLAND in 1977.
Tell us about your current menu: I strongly believe that there should be good extensive choice of different foods to suit the customers. Using freshest ingredients possible, full of flavour.
What is your favourite dish on your menu and why: Lamb Shank, This is my favourite and my personal signature dish because its cooked the same way as if you were cooking at home, braised slowly and full of natural flavours and herbs.
What inspires you: When customers enjoy their food & plates come back clean.
Which is your favourite restaurant? (not your own): I love Chinese Food - so any of them!
