What is your favourite dish on your menu and why: Scallops with apple and pancetta with endive tatin - delicately cooked scallop with the crispness of the fresh apple, crunch of the pancetta and sweetness of the tatin - simply delicious

What inspires you: Gordon Ramsay and simply positive feedback from my customers
