Work experience: I was thrown in at the deep end and trained under Tom Rogers from 101. I soon discovered that my discipline and with guidence from Tom, how small changes dramatically effect the flavour and presentation of food.


Tell us about your current menu: The Tex-Mex menu is desiged to be all things to all people. From hot and firery to sweet and sticky. All cooked to order to maintain full flavours and quality.


What is your favourite dish on your menu and why: Without doubt the Enchilarda, A sumptious dish that even after eating thirty or more I just don't get bored of it.


What inspires you: Making the best of simple ingredients.
