Mel Meets.....Head Chef Stephen Kanaris of The Metropolitan



Mel caught up with Stephen who is the Head Chef at West Didsbury's popular Metropolitan.

  • What is your name? Stephen Kanaris.

  • What is your current position? Head Chef.

  • And your restaurant is called? The Metropolitan.

  • How long have you been cooking? 17 years.

  • Tell me about your current menu. All fresh produce, cooked to order to create seasonal dishes as well as Met classics, which are all professionally executed to a high standard of presentation.

  • What's your most popular dish on the menu? The famous Metropolitan burger: 8oz 28 day aged chargrilled beef topped with bacon and cheese, stacked high in a caramelised onion foccacia and served with homemade burger sauce and triple cooked chips.

  • Where's the tastiest meal you've ever had? Fresh shellfish, prawns, crab, scallops, cooked simply to preserve freshness and flavour.

  • Where is your favourite restaurant? The French, Manchester.

  • Would you ever go on Masterchef or go down the celebrity chef route? No, too much glamour, not enough substance.

  • What do you think of the Michelin stars - is this the ultimate goal? For many chefs, yes, but for me it’s about a fresh plate of food, friendly service, and reasonably priced.

  • Who does the cooking at home?All the family, including the children.

  • Have you any guilty pleasures when it comes to eating bad food? Pork pies!

  • 10 years from now, where will you be? Possibly running my own little bistro, friendly atmosphere, casual but high end dining.

  • Any tips for budding wannabe chefs? Start at an apprentice level with a chef that can give you plenty of time, don’t rush, never think you know everything, everyday is a school day.

  • If you could work for any chef, who would it be? Raymond Blanc.

  • You're in an all you can eat - what do you go for first? The exit door.
