Mel caught up with Paul Prescott, Executive Chef of the successful Nelson Hotel group which has four stunning restaurants across Cheshire.

The Nelson group consists of The Bear’s Paw, The Pheasant Inn, The Fishpool and Ciro’s Brasserie.


  • What is your name? Paul Prescott.

  • What is your current position? Group Executive Chef.

  • And your restaurant is called? Nelson Hotels has four which include The Fishpool Inn, Pheasant Inn, Bears Paw & The Grosvenor Pulford Hotel.

  • How long have you been cooking? 16 years.

  • Tell me about your current menu. Fresh, innovative yet classical nods, seasonal, vibrant and tasty!
  • What's your most popular dish on the menu? Assiette of seafood.
  • Where's the tastiest meal you've ever had? Marc Wilkinson at Restaurant Fraiche on the Wirral.

  • Where is your favourite restaurant? The Waterside Inn, Bray.

  • Would you ever go on Masterchef or go down the celebrity chef route? Not really for me but open to all.

  • What do you think of the Michelin stars - is this the ultimate goal? If you’re in that area of the industry yes, busy restaurants is my Michelin stars.

  • Who does the cooking at home?Me!

  • Have you any guilty pleasures when it comes to eating bad food? Chinese take away on my knee on the sofa!

  • 10 years from now, where will you be? Hopefully with Nelson hotels with more sites and more progression.

  • Any tips for budding wannabe chefs? Listen hard, work hard and don't play hard.

  • If you could work for any chef, who would it be? Angela Hartnet.

  • You're in an all you can eat - what do you go for first? Cold beer.
