The “Haute Couture” of Champagne, has arrived at Tom at 101 Restaurant, Bar & Grill.


It is only fitting that a love-story be the inspiration behind the creation of a prestigious Champagne House…. And the story behind Ayala, the ‘Haute Couture’ of Champagne is shrouded in romance….

In the 1850’s, Edmond de Ayala - upon invitation to Champagne by the Viscount of Mareuil with the express purpose of learning the art of Champagne-production – fell in love with the Viscount’s niece, the captivating Miss Gabrielle d’ Albrecht, and the couple were soon betrothed. As a dowry for their wedding in 1860, the beaming groom received the picturesque Château of Aÿ coupled with prime vineyards, in Aÿ and Mareuil-sur-Aÿ, in the very heart of Champagne. Edmond’s knowledge of the Champagne business as well as his energy and passion soon placed the House of Ayala among “Grandes Marques” of Champagne. Up until the Second World War, The House of Ayala was afforded the honour of supplying the courts of Great Britain and Spain.

Today, Ayala’s location in the heart of Champagne, its limited production and the zealous team behind Ayala, are still key factors in achieving this outstanding quality. Nicolas Klym, the “Chef de Cave” (Cellarmaster) for over 25 years, epitomizes this adherence to quality and embodies the loyalty and passion of the team.

In 2005, impressed by Ayala’s exceptional quality, Jacques Bollinger purchased the House of Ayala on behalf of the Bollinger family, thus adding another exceptional brand to their superlative stable.
