Yellow Broom's Beetroot, Potato & Onion Top Soup Recipe
This recipe (which serves 8) includes our very own beetroot which is grown in our 'Lost Plot' vegetable garden along with the onions. The potatoes come from Pierpoint Farm behind us on Forth Acre Lane.
Recipe
100g butter
12 medium sized beetroots; peeled and chopped
2 litres of vegetable stock
2 large onions; peeled and chopped
3 cloves of garlic; crushed
1kg of Cheshire potatoes; peeled and chopped
Method
Slowly cook the onions, garlic and butter until soft, approximately 5 minutes.
Stir in the chopped beetroot and potatoes, cook for a further 5 minutes.
Stir in the stock and season with salt and pepper to your flavour. Bring to the boil then simmer for 30 minutes.
Puree half the soup in a blender then return the puree back into the remaining ‘chunky’ soup.
Serve with chopped onion tops and a swirl of sour cream.
